This weekend opened my eyes to possibly the most genius summertime cocktail invention - the poptail. What could possibly be better than an ice cold popsicle made from real fruit and honey on a hot, sticky summer day? One with booze in it. Enter the poptail - a fusion of a popsicle and a cocktail with literally endless possibilities. If you can make a drink out of it, you can make a poptail out of it. Not to mention these are amazingly simple to throw together - just blend up your ingredients, pour it in a popsicle form, add sticks, and freeze. The hardest part is choosing what flavor to make... I took some inspiration from the geniuses over at Endless Simmer, who seem to be complete poptail fanatics (and who can blame them really???) Above is their recipe for a Fig and Clementine Port Wine poptail, which is first on my list to try and looks so utterly sweet and heavenly I might die (because I'm probably going to eat all 8 myself in one sitting, if we're being honest). Below from left to right are: Watermelon and Blackberry Margarita, 4th of July Cocktail Cooler Popsicles (blueberry, pomegranate, and pear), Bourbon Butterscotch Latte, Honeydew Cucumber Margarita, and Dirty Pirate Popsicles (Rum, Coke, and Kahlua). The possibilities are endless (pardon the pun...). Swoon. Poptails of the world, beware. I'm coming for you.
