Redneck Party Dishes

OMG, or maybe I should say MSG!! A couple of my Texas gals and I were talking about some of the crazy redneck dishes that never fail to end up on a party table here in the south. Now, before I go bad mouthing the cuisine around here, let me tell you that I'm the first one to line up and fill my paper plate with these crazy concoctions. There are so many, ahem... "unique" recipes to choose from that might come out of a Texan's kitchen, but I do have three that consistently make me squeal when I see them served.
The first of these recipes is the most delicious ball of chaos you've ever mixed up and called it a "dish"- the Chipped Beef Cheese Ball. Mix two bricks of cream cheese with an entire jar of chipped (AKA dried) beef, season with salt, worcestershire sauce, and diced green onions. Roll into a giant ball of calories and serve with crackers. OH so good. The next recipe is the always simple Tortilla Roll-Ups. This was always my go-to when I was a young mom and had no time or energy for actual "cooking". Mix cream cheese, sour cream, black olives, diced green onions, and a small can of green chiles together. Smear the mixture on tortillas, roll them up, and stick in the refrigerator for a bit before slicing. Best if served with salsa (Pace Picante will be expected if you're in my neck of the woods). And finally... so easy and possibly the strangest sounding, Saucy Smokies. Mix little smokies, grape jelly, and chile sauce together in a crock pot. Turn that baby on low and let it simmer for a few hours. If you're a real fancy pants you can serve these little guys in a bowl, but trust me, these dang things are so good not even the snootiest of guests would judge if everyone just ate them right out of the bubbling crock. Now look... before you get all uppity and start snubbing your noses at these unusual Texas dishes, you need to give them a try. I promise y'all will want seconds.
