Peach & Prosciutto Crostini

This delicious peach crostini recipe falls under one of my favorite categories: fancy finger food. Ridiculously easy and simple, but will completely fool everything into thinking it's bougie and complicated since it tastes SO amazingly good. Perfect for summer (I try to stuff as many peaches in my face as I possibly can while they're in season), this recipe comes together in 10 minutes or less and is the perfect balance of sweet & salty. Next time I think I'll put the bread slices in the toaster instead of grilling them, because heck, it's way easier (if you don't already have the grill going) and that's a-okay with me.

Directions:
1. Grill (or toast) bread slices and slice up the peach.
2. Spread your cheese onto each piece of toast and shake some pepper on top. Any soft white cheese will work, so use whatever you like/have (ricotta is a great choice, but I think cream cheese would be just as good... the Texan in me says no need to get super fancy-ass with this one).
3. Tear up the prosciutto and add it to each slice.
4. Drizzle with honey, top with a few peach slices, and you're finished. Be prepared to make more... these tend to be devoured immediately.
