Now that I'm ready for fall, of course the heat has decided to stick around and bring some friends. I'm in the mood for a chocolate treat (like these heavenly molten chocolate cakes I posted about a few weeks ago), but there's no way in hell I'm turning on my oven. I'm so over this heat I don't even want to LOOK at the oven, let alone bake something. These mint chocolate cheesecake popsicles from My Baking Addiction are the perfect way to make something chocolatey delicious AND beat the heat. All you need is a few ingredients (shown above), a mixer, and a popsicle mold. They take about 10 minutes to make and a couple hours to freeze and voila! Cold, chocolatey cheesecake perfection (click here for the recipe). I think I'll lay in front of the air conditioner and devour a few of these babies over the weekend...
