Fourth of July Cupcakes

For me, 4th of July food has to be easy. I want to spend my day lounging in the sun, maybe on a boat, maybe in my backyard - but I definitely want a drink in my hand, and plenty of relaxation and fun. Really, the last thing I want is to be cooped up in the kitchen trying to make something complicated for my guests... sure, I want amazing food (grilled and greasy please, Texas style) - that's partly what this holiday is all about! But I also want to spend all of my time outside with the people I love. These easy 4th of July cupcakes are the perfect recipe for success. They're almost as good as that stupid red, white and blue layer cake that's so delicious but a pain in the ass to make. All you have to do is make a batch of vanilla or red velvet cupcakes from a box the day before (you can make them from scratch if you want, but if you're running out of time, the boxed variety is great - with all the drinks I'm sure will be imbibed that day, no one is going to have any idea, trust me). Top with vanilla frosting, then decorate with raspberries and blueberries. Red, white, and blue? Check. Delicious? Check. Fast and easy? Check. Throw some meat on the grill the day of, pour some drinks, and you've got the perfect 4th of July cookout.
